SPINACH STRAWBERRY SALAD
1 OZ Baby Spinach
2 OZ Strawberries
1 OZ Herb Croutons
1/2 OZ Roasted Almonds
2-3 OZ White Balsamic Vinaigrette
Fresh Ground Pepper to Taste


FILET MIGNON FORESTIERE
8 OZ Center Cut Beef Tenderloin Steak
2 OZ Clarified Butter or Olive Oil
3 OZ Assorted Wild Mushrooms, Sliced
1/2 OZ Shallots, Diced, 1/4 OZ Garlic
1 OZ Merlot, 1 OZ Beef Stock,
3 OZ Demi Glaze, 1/2 OZ Whole Butter
