Holiday Apple Pie Parfait (Healthy Alternative to Apple Pie)

Serves 1-2

Ingredients
2-3 green apples
1 T HIC olive oil
1 T HIC honey
1 tsp ground cinnamon
1 tsp Grade A Maple Syrup
1 tsp vanilla extract
1 oz. almonds
1 c rolled oats
2 T Anita’s Coconut Yogurt

Instructions
Cut up apples into medium-sized wedges.
Lightly oil sauce pan with olive oil over medium heat and carefully place wedged apples into sauce pan.
Stir apple wedges and add honey plus grade A maple to thoroughly coat slices – stir until golden brown.
Add a dash of cinnamon and pour vanilla extract.
Keep stirring until desired texture is met (let it simmer longer if desire softer-textured apples).
In a spare sauce pan, heat a pan on medium-high heat, and add olive oil. When the pan is hot, add rolled oats, and cook for a few minutes until they are toasted.
Pour sautéed apples into a bowl and top it with toasted rolled oats and a dollop of coconut yogurt (greek yogurt, frozen yogurt, or or ice cream work too) and garnish with almonds for extra crunch and drizzle with honey. Bon appetit!
