 BEEF BOURGUIGNON RECIPE
3 lbs Beef Cubes
3/4 lb Bacon
2 tbsp Olive Oil
1 large Yellow Onion
4 large Carrots
3 cloves Minced Garlic
1 lb whole Pearl Onions
1 lb Mushrooms
4 sprigs of Fresh Thyme
1 Bay Leaf
1 tbsp fresh Parsley
1/4 cup Cognac
1 tbsp Tomato Paste
2-3 cups Beef Broth
1 750 mil bottle of Dry Red Wine
Salt
Ground Black Pepper
5 tbsp Butter
4 tbsp Flour
