Mocha Java Shortbread

Mocha java Shortbread the perfect coffee dipper


  • 1 1/2 sticks butter
  • 1 1/4 cups flour
  • 3 teaspoons instant coffee granules
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1/2 cup mini chocolate chips


  1. Soften the butter by putting it in the microwave for about 45 seconds, then cream in the flour, coffee granules, powdered sugar and vanilla
  2. Add chocolate chips
  3. Knead once or twice, then shape into a roll inside a sheet of waxed paper or parchment paper
  4. Place in the refrigerator for one hour
  5. Remove dough from refrigerator and slice into about 1-inch rounds
  6. Place rounds on a greased cookie sheet; flatten just slightly with your fingers or a fork
  7. Bake at 350 degrees for 15 minutes
