Ruth Corcoran from Cork Bar and Restaurant in Wilkes-Barre is preparing a  spicy shredded beef tacos with guacamole & fresh salsa. 

 SPICY SHREDDED BEEF TACOS
4 LB of Beef Shoulder or Chuck Roast
2 TSP Smokey Paprkia
2 TSP Chipotle Powder
Kosher Salt & Black Pepper
1/2 C of Chipotle Pepper in Adobo Sauce
1 Yellow Onion, Cut into Chunks

1 Large Jalapeno Pepper, Chopped
1 - 28 OZ Can of Diced Tomatoes
Vegetable Oil, Flour Tortillas
8 OZ of Monterey Jack Cheese
Shredded Lettuce
Sour Cream
